Cookies n' Cream Cookies

I LOVE cookies and cream ANYTHING! You can never go wrong with that flavor...never. Here is my recipe for delicious cookies n' cream cookies:

1/2 Cup butter, at room temperature
3/4 Cup sugar
3/4 Cup light brown sugar
2 eggs
2 tsp vanilla
3 Cups all purpose flour
1 tsp baking soda
1 tsp salt
1 package of Oreo’s

Directions:


Preheat the over to 300°

In the bowl of an electric mixer, cream together the butter and sugars fluffy.

Add eggs and vanilla and beat until well mixed.

In a medium bowl, whisk together flour, baking soda, and salt.

Slowly add the dry ingredients into the wet until just combined.

Take a plastic bag and empty the Oreos into the bag and smash them until they are all crushed to perfection. Then, add them to your mixing bowl and mix.

Roll the cookie dough into 1 inch balls and set them on an ungreased cookie sheet about an inch apart from each other

Bake for 8-10 minutes, until the edges JUST start to brown. Let cool on baking sheet for a few minutes, then transfer to a cooling rack to cool completely and enjoy:)

Yields: 48 cookies

Clean Chocolate No Bakes

This is great! This is for all you clean-eating-sugar-lovers! Its tastes great and is very healthy:)

3 Tbsp Olive Oil
1/2 Cup Truvia Sugar Substitute
2 Tbsp Cocoa Powder
1/4 Cup Skim Milk
1/4 Cup Natural Peanut Butter
1 tsp Vanilla
3 Cups Oats
1/2 Cup Flax Seed

Boil on high oil, Truvia, cocoa, and milk. Once its at a rolling boil, take off the burner and add the peanut butter and vanilla and stir until smooth. Next, add the oats and flax seed. Then spoon on some foil and enjoy:)

Brown Sugar Cream Cheese Frosting

This is a delicious cream cheese frosting recipe that would go great on lots of baked yummies:)

1/2 Pound Cream Cheese
3 Cups Powdered Sugar
1 Half a Stick of Butter
1/4 Cup Buttermilk
1 Tbsp Vanilla
1 Cup Brown Sugar
A Couple Shakes of Cinnamon

Make sure to mix this for a good couple minutes, until the frosting is nice and whipped. Then spread on your dessert with a spatula and enjoy:)


Holiday Buttermilk Spice Cake

Ok, so my goal is to start trying some more "daring" recipes for my blog. So, I'm starting with this one: Buttermilk Spice Cake, A delicious treat for Fall/Winter. I love spice cake and this is a pretty darn good recipe! Ok here it is:

First things first, preheat your oven to 350°.

Ok, here is the list of ingredients:

2 Cups All Purpose Flour
3/4 Cup Sugar
3/4 tsp Baking Soda
1 1/2 tsp Cinnamon
1 tsp Pie Spice (this can be any of your choosing, I used Pumpkin Pie Spice in my cake, but I bet Apple Pie Spice would be delicious!)
1 Tbsp Ground Ginger
3/4 tsp Salt
3/4 Cup Brown Sugar
1 Stick of Butter, softened
3/4 Cup Buttermilk
2 Eggs

Directions: 
1. Mix all dry ingredients together.
2. Mix in the butter and buttermilk
3. Add the eggs and mix
4. Grease an 8x8 cake pan and line the bottom with parchment paper
5. Spray the top of the parchment paper grease
6. Bake at 350° for 45 Minutes

Let the cake cool, then take a butter knife and loosen the edges of the cake from the pan. Then grab another plate and put it on top of the cake pan and flip the cake over, so the cake lands upside-down on the plate. Then transfer the cake to another plate, right-side up. Frost with one of my signature frostings, and enjoy:)

Basic Cream Cheese Frosting Recipe

Here is a basic cream cheese recipe for future reference. Its wayy easy!

4 Ounces of Cream Cheese
4 Tbsp Butter
4 1/2 Cups Powdered Sugar
1/4 Cup Milk
1 tsp Vanilla

*if you want your frosting more solid, put in only about 1/4 cup of milk. However, keep adding milk for a more runny consistency

Pumpkin Pie Cinnamon Rolls

So, Patrick's mistress is cinnamon rolls...he loves them! So for his birthday, he obviously picked cinnamon rolls as his birthday dessert and was awesome enough to let me try a pumpkin cinnamon roll recipe! I looked all over online for a recipe that didn't make me use odd ingredients that I probably won't use very much. This was a very simple recipe that made my apartment smell heavenly! I found this recipe for Pumpkin Pie Cinnamon Rolls on a blog and decided to pair it with a Cinnamon Ginger Cream Cheese Frosting. So, without further ado, here is the recipe! (P.S. sorry about the crappy picture, my camera's charger is MIA right now so I've resorted to using my phone)

Cinnamon Roll Dough
1/4 Cup Warm Water
1 Packet (or 2 1/4 tsp) of Dry Active Yeast
1/3 Cup Warm Milk
3/4 Cup Pumpkin Puree
1 Egg
1 Tbsp Melted Butter
3-4 Cups All-Purpose Flour
1/2 Cup Brown Sugar
1 tsp. Salt
3/4 tsp. Cinnamon
1/4 tsp. Ground Ginger
Filling
1/4 Cup Melted Butter
3/4 Cup Brown Sugar
Cinnamon
Pumpkin Pie Spice

Directions:
1. Combine water, yeast, and milk in a small bowl and let it sit for five minutes to activate the yeast
2. Combine all ingredients (including separate yeast mix) and only 1 1/2 cups of flour and beat until mixed
3. Gradually add the rest of the flour to the bowl and mix well
4. Knead the dough until its smooth and stretchy
5. Place the dough in a lightly greased bowl and turn the dough over until all dough is greased 
6. Cover with plastic wrap and let it sit somewhere warm for an hour
7. Roll dough into an 18-20 inch rectangle on a lightly floured surface
8. Bast the dough with the 1/4 cup of melted butter 
9. Sprinkle the brown sugar evenly on the dough
10. Sprinkle to cinnamon and pumpkin pie spice with the amount you'd like in your rolls.
11. Roll dough into a "log" and slice into 15 slices
12. Place the newly cute slices into an ungreased 9x13 cake pan and cover with a clean towel 
13. Let it rise for 45 minutes until doubled in size
14. Bake @ 375° for 20-30 minutes

The frosting recipe will be in the next post. Its a pretty basic cream cheese frosting recipe and can have your favorite ingredients added to it. Anyways, eat and enjoy:)

Healthy, Healthy Pancakes!

Hey ya'll!

So, I've been surfing around Pinterest and keep hearing about these "so called" healthy pancakes. The only ingredients are eggs and a banana, SAY WHA? Anyways, I decided to give them a go, but only change the recipe a little bit to my liking. So here it is:

Mix:

2 Eggs
2 Bananas
1 Tbsp Vanilla
A couple shakes of Cinnamon

After these are mixed, pour the mixture (how much you pour at a time is up to you) onto a griddle. While you do have to watch normal pancakes and flip them when the start to bubble, you have to wait for these pancakes to bubble A LOT (Mine took about 6 minutes to bubble). Flip 'em and wait another {6 minutes or so} then they are ready to eat.

Whats awesome is that they taster just like banana bread! And there are so many different topping options that you can add to it that are healthy, like greek yogurt and fruit! So good:)
